Stuffed Tomatoes

Everyone has heard of stuffed peppers, but stuffed tomatoes?!  Last year I tried a recipe for tomatoes stuffed with spinach and cheese.  They were amaze-balls.  This year, I switched it up a little.. Here’s the recipe!

Stuffed Tomatoes

4 tomatoes

1 green pepper

1/2 c shredded cheddar cheese

2T parmesan cheese

Salt and Pepper

Cut the top off of the tomatoes and scoop out the guts (leave enough flesh on the side that they can hold their form).  Put the guts into your food processor with the big blade attachment.  Season the inside of your tomatoes with a little bit of salt and fresh ground pepper.  Throw your seeded and cored green pepper and cheeses into the food processor with your tomato guts.  Whiz a few times until it’s thoroughly mixed together and spoon it back into your tomatoes.  Cook at 350 for about 15 minutes, until all the cheese is melty and the tomatoes are soft.

Alterations:  You can throw about anything inside your tomato.. Add some basil, cooked rice, meat, beans.. Seriously people, the tomato’s your oyster!

Revamped BLT Salad

This recipe is so good I just had to share it with you right after I finished eating!

Revamped BLT Salad

4 hardboiled eggs, chopped

3 pieces of organic nitrate/nitrite-free bacon, cooked and chopped

3 tomatoes, seeded and diced

3 cloves of garlic, cooked in 1T EVOO until browned

4c baby spinach

2 T EVOO

Salt and Fresh Ground Pepper to taste

Mix all these ingredients together and serve immediately.  Deeeeelish!



Tuna Quinoa Salad

Here’s a quick idea to help you use up your leftover quinoa from last night’s dinner..

Tuna Quinoa Salad

1 1/2 c leftover quinoa, chilled

1 can chunk-light tuna

1 tomato, chopped

small handful of fresh basil, chopped

2 c spinach

Mix everything together in a bowl and eat as a salad or on a whole-wheat wrap.

With everything that is difficult and fast-paced in our lives, eating shouldn’t be at the top of our lists.  I know that starting out on a clean diet can seem very intimidating, but it doesn’t have to be difficult.  There are so many quick and easy recipes that are delicious and wholesome!  For example, this could easily be an entire meal..

3/4 – 1 c cottage cheese

1 apple

2 crisp breads, (like Wasa)

A few carrots

A large glass of Water.

Easy huh?  You don’t have to make a fancy meal to be clean!



Make-it-a-meal Mashed Potatoes

Sometimes I just don’t have time to make a fancy meal.  Can you relate?  I thought so. At lunch time the other day I was faced with 2 cranky kids, no leftovers, and seemingly no quick-meal ideas.  Then I remembered the bag of baby potatoes I had in the fridge.  I came up with the yummiest, most comfort-foodish, easiest meal ever!  Here you go..

Make-It-A-Meal Mashed Potatoes

1lb baby potatoes

2/3 c salsa

1/4 c shredded cheese (I used Muenster, my fav.)

1 c frozen corn

Sour cream, for serving

Throw scrubbed potatoes into a pot full of water.  Boil until they are tender, roughly 15 minutes.  To make things simple, I added the steam rack on top of the boiling potatoes and steamed my corn towards the end of the potato cook time.  You could steam them separate if necessary.  When the potatoes are done, throw them into your stand mixer and mix until creamy.  Add in corn,  salsa, and cheese.  Scoop into bowls and serve with a dollop of sour cream on top.  So-o-o good!
