Zucchini Pizza Boats

Inspiration struck yesterday!  Reviews are:  Nate: “These are delicious!” (Said at least 5 times) and Will:  “Mommy, I love this dinner!”  Owen: “Pizza!”

Zucchini Pizza Boats

2-3 zucchini sliced lengthwise (You can also sub summer squash)

1/2-1 c pizza sauce

3/4 c shredded mozzarella cheese

1/4 c shredded parmesan cheese

Fillers* see instructions

1.  Scoop the seeds out of the zucchini halves, leaving some flesh.  *Mince some filler veggies.  I used 2 cloves of garlic, about 2T minced onion and about 1/4 cup of broccoli stems that the boys passed over.

2.  Scoop an even amount of sauce into each zucchini half.  Layer the minced veggies and top with cheese.

3.  You can bake or grill these puppies.  You could bake them at 350 (it will probably take about 30 minutes).  We grilled them and they were fantastic! 



Peanut Noodles – My Staple Recipe

I’ve begun leading workshops through my church about whole foods.  One of the things we talked about was having a few staple recipes to fall back on when you either don’t have a plan, or are running low on groceries.  Well, here is my FAVORITE staple recipe..

Oh So Delicious Peanut Noodles

A fist full of rice noodles or whole wheat noodles

Sauce:

1/4c cup peanut butter (Try buying from those grinders in the store – so good!)

2 T coconut milk + more to thin if necessary (Or, you can just use regular milk or water in a pinch)

1 t red curry paste

2 T Pure Maple Syrup

2 T lemon or lime juice

1 t soy sauce 

3 T sesame oil

1 T minced ginger

1 clove garlic, minced 

This will make enough sauce for about a fist-full of pasta, depending on how saucy you want your noodles.

Additional Add Ins:

Shredded Carrots

Shredded Cucumbers

Chopped broccoli (steamed or raw)

Sprouts

Pepper slices

Be creative!

Cook up your noodles.  While they are cooking, mix up your sauce.  When your noodles are done, drain (and rinse if you want your noodles cold)  Toss together the sauce, noodles, and add-ins.   You can serve this warm or cold.



Maple Spiced Yogurt

I love yogurt, but I don’t do well with plain yogurt.  In my journey to only eat wholesome, natural foods, I have eliminated most of the commercial yogurts in my diet.  That leaves me with figuring out how to make my plain yogurt delicious.  Sometimes I’ll add blueberries and a touch of honey, chopped up apples, applesauce, peach preserves, etc.  Today I put together this little number and almost swooned.

Maple Spiced Yogurt

Serves 1, >5 minutes prep

1 c homemade or plain whole fat yogurt

1 T Pure Maple Syrup

1/2 t cinnamon

dash of vanilla

1/4 t nutmeg

Mix together and enjoy!



Tortilla Pizza

This recipe has become a lunch staple in my house.  My boys love it, and frankly, I do too! Feel free to experiment with whatever ingredients you have in your house.  Kids like to help too!

 

Tropical Pizza

Whole Grain Tortillas

Homemade or Organic store-bought pizza sauce*

Mozzarella Cheese, shredded

Parmesan Cheese, shredded

1.  Preheat oven to 350.

2.  Spread pizza sauce on the tortilla and top with cheeses.

3.  Bake in the oven for approx 5 minutes, or until cheeses are melted and pizza is heated through.

 

*If you don’t have pizza sauce, I’ve used tomato sauce and even tomato paste with italian spices sprinkled on top (Garlic powder, parsley, oregano, rosemary, etc)



Apple Wraps

Personally, sometimes I find it difficult to think of nourishing snacks for my family.  Especially because I never plan ahead.. Today I came up with this super easy and nourishing snack…

Apple Wraps

whole grain tortilla

organic cream cheese

Pinch of cinnamon

Pure Maple Syrup

Finely chopped apple

1.  Spread a little bit of cream cheese on the tortilla.  Top with chopped apple, a tiny bit of syrup, and a pinch of cinnamon.  Fold up and enjoy!



Apple Sausage Scramble

Friends, I LOVE fall food!  Since I began eating seasonally I have truly begun to embrace the foods that each season brings.  Right now I’m completely head-over-heels in love with fall food!  The winter squash and apples are my favorites!  Well, I am pretending right now that we are not in the throes of an incredible Indian Summer and I am making comfort foods.  Today I made the yummiest dish, I just had to get online immediately after clearing my bowl and tell you all about it!

Apple Sausage Scramble


1 lb hot sausage

4 apples, cored and diced

1 c shredded cheddar cheese (I prefer sharp, but you can use whatever you like)

Brown sausage in a large skillet.  Add apples and cook until they’re crisp-tender.  Add the cheddar cheese, stirring until melted.  Serve it up!  I’m telling you, this is SO easy and delicious you’ll be making it constantly!  I know I will!
