Mulberry Frozen Yogurt

Do you have access to a mulberry tree?  Is there one dropping copious amounts of berries into your yard?  We do!  I’ve been trying to come up with recipes to use them up and I have a winner!

Mulberry Frozen Yogurt

1 qt plain yogurt (Locally I like to use Kalona Supernatural)

2 T maple syrup

a dash

1/4 c pureed mulberries

Mix all of this together and either process in an ice cream maker or stick it in the freezer, stirring every half an hour or so until it is firm.


Delicious PB Choco-Chip Cookies

Who doesn’t love a good cookie?  I developed this recipe for my mom, who requested a wholesome pb cookie.. I ended up LOVING this recipe and made them for my son’s birthday party this week.  Enjoy!!

Delicious PB Choco-Chip Cookies

2/3 c Organic Peanut Butter, room temperature

1/2 lb unsalted butter, room temperature

1 c raw organic sugar

2 eggs

2 t vanilla

2 1/2 c whole wheat flour

2 c dark chocolate chips (more or less depending on preference)

1.  Preheat oven to 375 degrees. Cream peanut butter, butter, and sugar.  Add eggs one at a time, mixing well with each addition.  Mix in vanilla.  Add flour, a little bit at a time until combined.

2.  Refrigerate for 1h – 2 days or freeze for 1 month.  When ready for baking, shape into teaspoon-size balls and place 2″ apart on a cookie sheet lined with parchment paper.  Press a fork into the top of each cookie to smash them down a little and create a criss-cross pattern.  Bake for 6-8 minutes, or until slightly browned on top.

3.  Enjoy with a glass of delicious cold milk!  🙂

Yummy and Wholesome Chocolate Chip Cookies

I am a cookie freak.  I LOOOVE cookies!  These are wholesome and delicious.. Enjoy!

Healthy Chocolate Chip Cookie Recipe

1 cup whole wheat flour

1 cup oat flour (Blend oatmeal to a fine powder to make oat flour)

2 tsp baking powder

1/2 tsp salt

1/2 t nutmeg

1/2 t cinnamon

1/2 c organic butter

1/2 c raw local honey

1 egg

1/4 c organic milk

5 oz dark chocolate chips

Preheat oven to 350.  In a medium bowl, stir together flours, baking powder, salt, nutmeg and cinnamon.  In a large mixing bowl mix honey and butter until creamy.  Beat in the egg, then the milk.  Stir in the flour mixture.  Stir in the chocolate chips.  Drop by rounded teaspoons onto cookie sheets.  Bake until browned around the edges, about 10 minutes.  Yum!

Chocolate Sauce

Who doesn’t love chocolate?  This is one of my biggest struggles, I could definitely probably eat chocolate every meal and be happy.  I had to figure out a way to make my chocolate habit beneficial to my body.  Well folks, I figured out a way.  Here’s the recipe I use to make the most DELICIOUS chocolate sauce.. It’s wholesome, natural, and is such a yummy treat!  I use it to dip bananas, nuts, cheese, on top of homemade/natural ice cream, or sometimes even plain.. Rarely does a day pass without me eating at least one serving of this stuff.  You can thank me when you’re licking the bowl clean!  🙂

Megan’s Fabulous Chocolate Sauce

3T honey

1 1/2 T cocoa

1t coconut oil

1T peanut butter/almond butter

dash of vanilla

Put all ingredients in a large ramekin or very small bowl and warm it on the stove or in a toaster oven until it’s warm or is starting to bubble. Stir until everything is smooth and combined.  Use it to dip whatever you wish.. My favorite is bananas!  Yummy!  🙂
