BBQ-ed chicken and safer grilling

Sometimes I’m lazy.  There.  I said it.  The other day I just didn’t want to spend more than a few minutes on dinner, but I wanted something nutritious, delicious, and satisfying.  So… I whipped this up.

Grilled Chicken and Mangoes

2 Mangoes, sliced

1 T soy sauce

1 T honey

1 T rice wine

1 T rice wine vinegar

1 1/2 lbs chicken breast

Mix together honey, soy sauce, rice wine, and rice wine vinegar.  Brush onto the chicken and let marinate for 15 minutes or so.  (The longer the better).  Then, toss everything on the grill.  Use the extra sauce to brush on the chicken.  Flipping often, cook until the mangoes are heated through and the chicken is finished cooking.  That’s it!
