Trail Mix Breakfast Cookies

So I know all of you have lots of time to make delicious healthy breakfasts, oh wait, that is basically no one.. My mornings are often rushed and hectic, therefore I love having quick and easy breakfasts.  I came up with this recipe for breakfast cookies to help fill that gap.  I keep some of these frozen so I can just pull them out for especially hectic mornings, or even just a filling snack.  Plus, the boys LOVE the idea of having cookies for breakfast!  With very little sugar, lots of fruit and nuts, these little cookies pack lots of nutritional punch!  🙂

Trail Mix Breakfast Cookies
1 c whole wheat flour
1 c oat flour (oatmeal blended up)
2 t baking powder
1/2 t salt
1/4 t nutmeg
1/4 t cinnamon
1/2 c butter, softened
1/2 c honey
1 egg
1/4 c milk
Mix Ins (you can switch these up depending on what you have on hand, mix in as much or as little as you like!)
rasins
dried cranberries
almonds
walnuts
sunflower seeds
dark chocolate chips
pumpkin seeds

Cream butter, milk, egg, and honey in mixing bowl.  Mix together flours, baking powder, salt, nutmeg.  Slowly add dry ingredients to the wet ingredients, mix until just combined.  Stir in your Mix-ins.  Drop rounded teaspoons of dough onto parchment paper-lined cookie sheets and bake at 350 for 8-10 mins.  Can be stuck in the freezer and enjoyed for quite a while after baking!  🙂
