I will admit it.. I used to hate coconut.  All I had ever tried was the dried shredded coconut sold in grocery stores, and I NEVER liked that one bit!  However, recently I read many delicious sounding recipes and decided I should give coconuts one more try.. So, I went to the store and bought a whole coconut.  It was quite the adventure to learn how to open it, but I managed!  I have done quite a bit of research into the benefits of coconuts and have found astonishing information.. For example; coconut water so closely mimics our own blood, people in tropical countries are given the water through IVs to replenish blood loss!  I also found out that it is the best thing you can drink while you are sick to your stomach as it will replenish electrolytes and fluids faster than any other liquid.  Forget the 7up and gatorade, drink up coconut water!  There are many more incredible coconut facts at this website.. http://www.coconutresearchcenter.org/

Cherry Vanilla Frozen Yogurt
1 1/2 cups plain yogurt
1/4 cup agave nectar
2 t pure vanilla extract
2 c cherries, pitted and chopped (I pulsed them in the food processor)

Mix together and pour into your ice cream maker and let it do it’s job! 🙂

Coco Loco Banana Popsicles

1 1/2 c ripe bananas, smashed
1 1/2 cups 100% natural coconut water
2 tsp agave nectar
1 tsp pure vanilla extract
1 c shredded unsweetened coconut

In a food processer, puree bananas and coconut water until smooth. Add agave and vanilla and blend until combined. Use a spatula and scrape into a mixing bowl. Mix in coconut. Pour mixture into cups or popsicle molds and freeze until firm.. Deeelish!
